Mike developed an interest in cooking at an early age and started his professional career at AJ's Bistro working for the previous owners, his Sister and Brother-in-law, Julie and Andrew at the age of 18.During his apprenticeship at AJ's, Mike attended Blackpool and Fylde Catering College for four years to further his craft. Consistently coming top of his year, Mike excelled at food hygiene and learnt to cater for individual dietary requirements.

This training means Mike and AJ's are proud to be able to offer a wide variety of speciality dishes for all dietary needs.Born and bred in Blackpool, Mike won the Lancashire Young Achiever of the Year award in 2002, beating Andrew Flintoff in the final! AJ's holds a special place in Mikes' heart as this is where he met his wife Amanda Jane and when the opportunity came to buy AJ's from his family, they jumped at it.
